I love this partially homemade dessert a lot. Cook a pot of red bean soup with glutinous rice using a slow cooker. The glutinous rice can be the normal one or black glutinous rice. Can add sago for a more sticky texture, depends on own preference. Add orange peel or pandan leaves for more fragrance. Add sugar based on the level of sweetness you like.
When it is boiled and cooked, scoop out the puree. Leave the puree in the fridge, it will serve as the topping.
Buy a good brand of ice cream, personally I like Haagen Dazs rum raisin or coffee flavour. Baskin Robbins is another good choice too. Just remember a good ice cream really makes a big difference.
Here is the photo of ice cream topped with red bean with normal glutinous rice and sago.
Here is another version, red bean with black glutinous rice. Both versions have been cooked with dried orange peel.
Try it and you will love it for sure. :)
